Crazy Cauliflower
*This is a spicy baked cauliflower side dish topped with seasoned "breadcrumbs"

Ingredients:

1 medium head cauliflower, chopped into bite sized florets 
1 scallion (green onion), chopped 
2-3 tbsp avocado oil or melted ghee (enough to coat) 
1 tsp sea salt 
1 tsp granulated garlic 
1/2 tsp black pepper 
2 tbsp almond flour 
Paprika to sprinkle on top (about 1 tsp) 

Directions: 
1.  Preheat oven to 375F and line cookie sheet with parchment paper. 

2.  Toss chopped cauliflower and scallion with oil, salt, garlic and pepper and lay on parchment paper. 

3.  Top with almond flour.  Sprinkle all over with paprika.

 4.  Roast in preheated oven for 45 mins, or until cooked.

Strawberry Avocado Salad

Ingredients:


1 avocado, chopped

4-5 strawberries, chopped
handful of fresh cilantro, chopped
drizzle of balsamic vinegar
drizzle of melted coconut butter (place jar in hot water to melt)






Waldorf Chicken Salad

This is a really easy and delish way to use up leftover chicken.  Serve in lettuce wraps or over a salad.

Ingredients:

1 cup chopped cooked chicken
1/4 cup homemade ranch 
1/2 cup chopped walnuts
1/2 cup chopped apples 
2 celery stalks, chopped
1/4 cup sliced grapes OR 2 tbsp raisins 
1 tbsp lemon juice
Poppyseeds, salt, pepper to taste 












Roasted Garlic Mashed Cauliflower

Ingredients:


1 head chopped, steamed cauliflower
1 whole roasted head of garlic
2 tbsp ghee
2 tbsp unsweetened full fat coconut milk, just the solid fat on the top of the can
1 tsp sea salt
1/2 tsp black pepper
Chives or choice of fresh herbs

Directions:


Food process all ingredients to a smooth mashed potato consistency. 




Taco Seasoning 
*Spice Mix for 2 lbs of meat

Ingredients:
1 Tbsp chili powder
1 Tbsp arrowroot starch
1 1/2 tsp cumin
1 tsp sea salt
1 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/4 tsp crushed red pepper flakes
1/4  tsp dried oregano

2 Tbsp tomato paste, separate- do not add to spice mix.  

Directions:

Brown meat in a pan on medium heat.  Add the spice mix and tomato paste.  Mix to combine and lower heat.  Simmer a few minutes.  

Paleo Sour Cream

                                                     Ingredients:

1 can of full fat unsweetened coconut milk, the solid fat only
2 Tbsp apple cider vinegar, white vinegar, or lemon juice
Dash of sea salt]

Directions:

Just mix or whisk it all up in a small bowl.  That is it!  









Wasabi Avocado Sauce/Dip



















Ingredients:

 1 medium avocado
 juice of 1 lime
1 Tbsp Wasabi paste (I make my own with 1 Tbsp Eden organic wasabi plus 1 Tbsp warm water)
 1/4 cup chopped fresh cilantro
 Sea salt to taste

Directions:

Dump it all in a food processor and pulse until smooth.  



Cauliflower rice 


Ingredients:

1 head of cauliflower
2 Tbsp oil
2 Tbsp coconut aminos
3 scallions or small onion, chopped
1/2 cup shredded carrots 

Directions:

Chop a head of cauliflower.  Food process it in 3 batches into small grain pieces, it will look like couscous.  Pan fry it up in ghee or coconut oil.  Add the coconut aminos and veggies.  Sauté until cooked to your liking.  

Latte

Ingredients:


1 can full fat unsweeteed coconut milk (I use Native Forest)

2 Tbsp cocao

Directions:


Blend and refrigerate.
