Pizza Chicken

So it's been awhile since you've heard from me here!  I know, and I'm sorry but all of a sudden my 4 year old has more of a social life than I do and my 1 year old has learned to tear apart my house and not allow me to cook or do anything.  I'm also in the beginning phases of a new ebook that I'm super excited about, it's going to be really awesome.  I have kept pretty quite about it, but almost all recipes are done and I have an awesome helper photographing for me.  Thank gawd, because my kids are seriously at an age where my son tells me I can't take photos of any of "his" food and my daughter has no time for photos, she's elbow deep in it before it hits the plate.  Anyway, I'm excited and will share more about it soon!  Make sure you sign up for the newsletter to be the first to know about it.

You guys are going to flip over this recipe.  It literally tastes like pizza.  My kids go nuts over this and my son will swear to you that it's smothered in cheese.  It is also ridiculously easy to prepare and great for a busy weeknight dinner.  You could serve with some marinara sauce if desired but I love it just as it is.  Parmesan or mozzarella would be delish on top, if you tolerate dairy, unlike myself. Pizza Chicken

Servings: 2-4
Prep time: 10 minutes
Cook time: 45 minutes


1 lb boneless skinless chicken breasts, thinly sliced or pounded thin
1/2 cup mayo
Spice mix
1 tsp each salt, paprika, garlic powder, onion powder, dried basil, dried oregano
1 tbsp almond flour
1 tbsp dried minced onion pieces


Preheat oven to 350F.  Line a baking sheet with parchment paper.

While oven preheats, mix up your mayo and spices (not the almond flour and minced onions) in a large mixing bowl to form "pizza mayo".

Coat your chicken pieces well with the pizza mayo, using it all.

Place coated chicken on parchment paper.  Tent with foil.  Bake in preheated oven for about 40 minutes, until chicken is cooked through.

Pull chicken tray out.  Take off foil.  Increase heat to 400F.  Sprinkle each piece of chicken with almond flour and dried minced onion.

Place back in the oven for 5 minutes, just to brown the minced onions.

Enjoy with fresh herbs.

  1. I dont have any almond flour :/ Think I could sub coconut flour??

    1. Yo can just skip it or use Parmesan cheese or any not flour ;)

  3. so I am new to all this- do I need to buy a certain type of mayo? and I didn't know Parmesan cheese was okay either. Not judging.. just overwhelmed by all the info... didn't know if this was like a modified Paleo

    1. Hi! Yes, you should make your own mayo or but a clean brand that does not use soybean oil. I make my own mayo, there is a recipe on my blog for it.  There is no Parmesan in the recipe.
