Coconut Butter Melts

So I'm finally getting these coconut butter melts up on my blog!  If you follow me on Instagram, you know I'm obsessed with coconut butter and I melt and mold it into pretty silicone molds.  
I hoard molds! Seriously... I have like 10 different ones!  I thrifted some, I pick them up whenever I see them random places like michaels or grocery stores and I've gotten many on amazonhttp://www.amazon.com/Buyinhouse-Decorations-Cavities-Mustache-Chocolate/dp/B00KL9XUYI/ref=sr_1_24?s=grocery&ie=UTF8&qid=1403099107&sr=1-24&keywords=silicone+molds.  My fiancé knows I'm obsessed with them and he will surprise me with a new mold sometimes!  If you don't have molds, you can use muffin tins, mini or regular.  Just use paper liners because otherwise you can't pop them out.  One of my followers even used a plastic egg carton! They pop right out! Another option is refrigerating the mixture for 10 minutes or so, it will harden a bit, then roll balls.  Another option is spreading the mixture in a pan and cutting bars or bark out of it.  I use Artisana brand coconut butter http://www.amazon.com/Artisana-Coconut-Butter-16oz-Glass/dp/B00IMIJHCO/ref=sr_1_1?ie=UTF8&qid=1403099019&sr=8-1&keywords=artisana+raw+coconut+butter and Woodstock brand cashew butterhttp://www.amazon.com/Woodstock-Cashew-Butter-Unsalted-16-Ounce/dp/B0057RJM28.  People ask a lot, and these are just my favorites, but any will do!  To warm the coconut butter place the jar in a bowl of hot water until it is melted and you can pour to measure.  I don't own a microwave, and I wouldn't recommend microwaving coconut butter because it will destroy some of the benefits of the butter.

These are a few of my favorite melts, and I will be adding to this list as I create more!  I often mold pure coconut butter and just pop them like candy!

Coconut butter melts are a great snack to keep in the fridge, they are delicious and satisfying with no sugar spike.  They are sweetened only with fruit, if at all.  As a nursing mom that needs to stay fueled, these really help me!  They will help athletes trying to keep energy up also.  Feel free to add a tbsp or more of raw honey or grade b maple syrup to your melts to suit your taste.  You can always taste the mixture in the food processor and adjust from there.  


Cinnamon Raisin Melts

*these are my absolute favorite!  They taste like cinnamon raisin bread!




Ingredients:




1/2 cup coconut butter, warmed
1/2 cup cashew butter
1/3 cup raisins
2 tsp cinnamon
Dash of salt












Raw Brownie Bites 
These are amazing little bites of heaven.  Rich and chocolate-y.
*makes 10 bites 

Ingredients:

1/4 cup cashew butter
2 tbsp cocao
1 tbsp coconut flour
1 tbsp coconut butter, melted 
2 tbsp grade b maple syrup
1/4 cup chocolate chips/chunks
Pinch of salt 

Directions:

Mix everything together in a medium bowl.  Roll into balls. Refrigerate.  Enjoy!  Store in the refrigerator. 








Lemon Zest Coconut Melts

Ingredients:

Coconut butter, warmed
Lemon zest
*melt the coconut butter, pour into molds and grate lemon zest on top.  Place in the fridge to harden and eat! Lemon zest is so delicious with coconut butter, so simple but so good!












Milk Chocolate Melts

Ingredients:

1/2 cup coconut butter, warmed
1/2 cup cashew butter
1/4 cup cocao
1/2 tsp vanilla extract
dash of salt















Peppermint Mocha Melts
*these are great any time of the year and peppermint is great for weightless as it is a natural appetite suppressant.  It can also provide headache relief and is great fork alertness.

Ingredients:

1/2 cup coconut butter, warmed
1/2 cup cashew butter
1/4 cup cocao
1/2 tsp vanilla extract
dash of salt
6 drops high quality peppermint oil, I use DoTerra OR 1/2 tsp peppermint extract








Banana Nut Bread Melts
These are a little chewy and taste a lot like banana bread.


Ingredients:

1/2 cup coconut butter, warmed
1 ripe banana
1/4 cup walnuts or pecans
1 tsp cinnamon
Dash of vanilla extract
Dash of salt
Dash of nutmeg 








Carrot Cake Melts

Ingredients:

1/2 cup grated carrots
1/2 cup coconut butter, warmed
1/4 cup cashew butter
10 dates
1 tsp cinnamon
1 tbsp chia seeds
Dash of vanilla extract
Dash of cardamom (you can skip if you don't have)
*optional-shredded coconut flakes to roll in









Superfood Energy Bombs

Maca-cocao-chia and coconut oh my!  These are a powerhouse of energy. Read below for some of the magical maca powers. Warning- if you are used to sugar, they will be bitter.  To me, they are sweet, creamy, milk chocolate-y and the perfect afternoon pick me up- without the sugar hit. Packed with superfoods, healthy fat and protein, they are the perfect thing to keep in the fridge and pop at 5 pm when that sluggish wave hits before dinner.  100% guilt free energy with absolutely no sugar. Start with 1 tbsp maca, taste the mixture from the food processor and add more if it's not too strong.  You can also add a tbsp of grade b maple syrup or raw honey. 

Ingredients:

1/2 cup coconut butter
2 tbsp cashew butter
2 tbsp maca root
2 tbsp cocao
1 tbsp chia seeds
1 tbsp coconut oil
Dash of himilayan salt

Directions for all melts:

Food process, mold in silicone molds or muffin papers, refrigerate, enjoy.  Store in the fridge or freezer.

Ingredients:

Coconut butter
Chopped fresh fruit
*melt coconut butter, pour into molds and top with fresh chopped fruit!  That's it! Again, so easy but yummy!
