Raspberry Vinaigrette and Marinade

This vinaigrette is so simple, with only 4 ingredients, and so easy to blend up.  It's a great summer salad dressing or marinade for chicken.  Serve this over a fresh spinach, arugula or mixed green salad with seasonal fruits, veggies and some walnuts or pecans.  

You can use strawberries or blackberries in place of raspberries and any vinegar will work- apple cider vinegar, other fruit vinegars, or red wine vinegar are all ideas.  

I add fresh rosemary to the vinaigrette to marinate.  It really compliments and adds extra flavor.  

Homemade Raspberry Vinaigrette and 


1 cup fresh raspberries
1/2 cup extra virgin olive oil
1/4 cup raspberry wine vinegar (you can find this at any grocery store but red wine vinegar will sub)
Fresh ground red pepper 


Food process or blend until smooth.  

For marinating:

2 lb chicken
1 batch raspberry vinaigrette
1 tbsp fresh chopped rosemary
Cracked black pepper


1.  Marinate overnight or at least 1 hour.

2.  Crack pepper over both sides of chicken.  

3.  Grill, bake, or pan sear chicken to cook.
